quick tips on pairing beer and cheese. beer and cheese isn’t necessarily “better” than wine and cheese, but it’s definitely a little easier to get right. i’m into the slightly stinky meadow creek grayson and the rich, clothbound beecher’s flagship reserve cheddar right now - both go great with beer!

food?
not too much excitement in food-land these days. i feel like i haven’t posted any good cookin’ in a while. also, i haven’t taken any photos while i’ve been dog-sitting this week, but i will describe a delicious steak i made the other night:
very delicious and steak-y. i rubbed it down with coarse salt, pepper, and a little crushed red pepper and let it sit around…seared it in hot oil, finished it in the oven… while it was finishing i cooked some shallots in steak juices from the searing pan with a little butter, added some thyme and sage, then a little sherry vinegar to make a sweet and savory relish-like accompaniment to the steak. magnifique.
